Kirby’s Greek Tomato Salad


  • juice of one large lemon
  • 1/4th cup olive oil
  • 1/4 cup red wine vinegar
  • 3 garlic cloves minced
  • 2 tsp fresh or dry oregano
  • 2 tbsp Kalamata olive brine
  • 2 cups small tomato halves
  • 1 large English cucumb
  • 1 small shallot, sliced
  • 1/2 cup Kalamata olives
  • 1 bell pepper chopped
  • 1 small red onion, sliced


  • Garnish with fettuccine Cheese
  • Ganish with Basil
